• 1 (15 oz. can of pumpkin)
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 2 tsp baking soda
  • 1 T plus 2 tsp pumpkin pie spice
  • 1 tsp salt
  • 1 cup unsweetened applesauce (or vegetable oil)
  • 3 eggs


Preheat oven to 350 degrees. Paper-line or grease 12 muffin cups.

Combine flour, sugar, pumpkin pie spice, baking soda, baking powder and salt in large bowl.

Combine pumpkin puree, eggs, oil or applesauce in large mixer bowl; beat until just blended.

Add flour mixture to pumpkin mixture; stir just until moistened. Spoon batter into prepared muffin cups.

Bake 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
