Ingredients:
- 3½ pound ground beef
- ¼ cup chopped onion
- 1 pkg. taco seasoning
- 1 can diced tomatoes, drained
- 1 cup shredded cheddar cheese
Crust:
- 2 eggs
- ¾ cup all-purpose flour
- ½ tsp salt
- 1/3 cup milk
- 1 T cornmeal
- ½ cheddar cheese
Directions:
Brown beef and chop into fine crumble then drain. Mix in diced tomatoes and chopped onion. Add taco seasoning and water. Simmer for 10 minutes. Remove from heat and stir in 1 cup cheddar cheese.
In a medium-sized bowl, whisk a whisk, beat together the eggs, flour, salt, milk and ½ cheddar cheese. Grease a 9” pie pan. Pour mixture into the pan and sprinkle with cornmeal. Spoon the meat mixture into the center of the batter, keeping it one inch from the edge.
Bake at 400 degrees for 25 to 30 minutes until crust is lightly browned.
Variations: Serve with extra sour cream, salsa, black olives, and green onions.
